What kind of chocolate is in a mole?
The Mexican chocolate that your recipe calls for is most likely the tablets that are used for hot chocolate. It is a relatively crude mildly sweetened chocolate (i.e. not smooth texture) with a strong cinnamon addition. A tablet or two of a dark chocolate with added cinnamon should work "Hot chiles and rich chocolate make this authentic mole sauce perfect for topping stewed meats or enchiladas." Ingredients

All funds raised support the educational programs and exhibitions at Turtle Bay Exploration Park, a 501(c)3 nonprofit whose mission is to promote wonder, exploration, and appreciation of our world. The Aztecs believed the cacao beans used to make chocolate were a gift from their gods, and they’d bestow this sacred gift upon royalty and warriors, thus instituting the practice of giving chocolate to those very special. Casanova called it the “elixir of love” and drank it instead of Champagne. So chocolate came to be one of the gifts given — and happily consumed — on Valentine’s Day. In 1861, Richard Cadbury, son of chocolatier John Cadbury, created the first heart-shaped box for chocolate and an economy was born.
Valerie Gordon, whose pioneering Westlake shop, Valerie Confections, debuted in 2004, now sells velvety truffles and chocolate-dipped toffees sprinkled with fleur de selat three locations across town. Jonathan Grahm of Brentwood’s Compartés offers an array of brightly packaged bars that are speckled with everything from rose petals to breakfast cereal at his Wonka-esque Century City store-front (which is outfitted with an appropriately whimsical chocolate fountain). At Letterpress Chocolate in Beverlywood, David and Corey Menkes transform raw cacao beans meticulously sourced from farms in Ecuador, Ghana, or Peru into complex single-origin creations; at ChocoVivo in Culver City, self-taught chocolatier Patricia Tsai follows a similar model of sustainability when it comes to her rustic cacao-based goodies. |
